I appreciate your patience and words here. Like miso, recovery from a brain infection has taken a long time to come together in my life as I learn more from this process. Your words have made a difference today.
A timely reminder that there is a lot unseen that is the real goodness🙏 Japanese culture is such a quiet and generous teacher. Preparing at the moment to return to Kyoto for the month of November and enjoyed reading of miso and looking forward to savouring miso daily. ❤️
I really enjoyed this, Ta, beginning with your intriguing title, "time makes the miso".
Time makes everything in our lives worthwhile ..... we have to live our lives forwards, but can only understand them backwards!
As a home cook, I've always appreciated the alchemy of time plus ingredients, most especially from making bread by hand....setting it aside for the yeast to prove, kneading it and waiting again before shaping it and putting into the oven.
The other place I've learned patience is as a mother.....beginning with waiting nine months for each of five wonderful babe's to be born, then nurturing their growth, trying to provide both roots and wings.
Having said all this, I'm still not a naturally patient woman....but believe our Creator makes all things beautiful 'in his time'.
Thank you for sharing this with us all.

I could use some more patience in my life, this will be a lovely series, thank you!
So inspiring to hear you will be looking forward to this with me. Thank you Hilda.
